My Absolute Favorite, Best Ever Cookie Recipe

Lets face it the holidays conjure up for me images of my Mom in the kitchen making her famous fudge, or my Grandma who made the best cream cheese cookies which I will be sharing her recipe very soon it is fabulous and I make them every holiday season!  I don’t even attempt to make my Mom’s fudge I just can’t make it as well as her, and my Mother In Law makes the absolute best sugar cookies.  Yes these are all goodies and many of us wait for the holidays to get our hands on them.

This recipe has never ever failed me! It has always been a super, duper hit and I plan to make them for our staff Thanksgiving gathering next week so I will share it with all of you just in time for the holidays!  It is loaded up with yes fattening, but good wholesome, yummy ingredients!

My Absolute, Favorite, Best Ever Cookie Recipe

Ingredients:

1 ½ C all-purpose flour

Dash of salt

1 tsp. baking soda

1 ½ tsp. cinnamon

1 C butter

½ C dark brown sugar

1 C sugar

1 Large Egg

1 ½ tsp. vanilla extract

1 C ground walnuts or pecans

1 C old-fashioned oats

1 C semi sweet chocolate chips

1 C. raisins but I often like to do half cranberries and half raisins…yes the cranberries make them look very festive! (For this particular recipe I only had a handful of raisins…..as you can see…;)…)

Instructions:

In a small bowl mix flour, baking soda and cinnamon.

In a large mixing bowl beat butter and sugars until light and fluffy. Beat in egg and vanilla.

At a low-speed, beat in flour mixture until blended.

Stir in ground walnuts, oats, and chocolate chips.

Cover with plastic wrap and chill for 1 hour.

Pre-heat oven to 350.

Grease 2 baking sheets.

Shape dough into 1-inch balls. Place balls 2 inches apart on prepared baking sheets. Flatten each cookie slightly (The bottom of a mug works).

Bake cookies until lightly browned around the edges, 10 to 12 minutes.

Transfer to flattened brown paper bags or wire racks to cool.

This dough also freezes well. Freeze dough balls on a cookie sheet and then put them in a freezer  bag in the freezer until ready to bake!
