Nasturtium & Beet Salad

Sometimes I just want a really light salad and this is the perfect salad to serve alongside some fresh fish caught from the ocean.  I usually use a dressing of balsamic vinegar with just a bit of olive oil mixed in.

I love going into the yard and harvesting our lettuce, picking out the perfect beet for the salad, and then picking the nasturtium flowers to arrange on top of the salad.

This salad is very simple it is just:

salad greens

fresh beets (I peeled and sliced)

Nasturtium flowers

My dressing is simply 3 parts balsamic vinegar to one parts oil.

Nasturtiums are edible, the flowers add beauty to a salad and their leaves have a peppery taste which adds some nice flavor.

Beets are a rich addition to any salad….I always thought that I hated beets and I do hate canned commercially grown beets but beets I have grown in my own garden that are fresh I love!

This year we grew tons of lettuce we had two varieties (Red Sails and Romaine) they have both been wonderful delicious lettuces.  Even nicer even after they bolt they still taste great!  Which we have some bolting going on now!
