Freezer Mishap Turns Out Amazing Lamb Burritos

You know I almost called these Carnitas but then changed my mind and called them Burritos and they ended up being a big hit with the men in my  household plus my son had one of his close friends over last night and let me tell you they devoured them.

So what is the difference between a Carnita and a Burrito?  Well Carnita literally means “Little Meats” and it often refers to pork and many times they are served with guacamole, avocado, limes or radishes on the side and beans of course.  Burritos of course mean just about anything wrapped in a cylinder shaped flour tortilla with a filling placed inside.  Yes I wikipedia’d this 😉  Well ours were served more “American” taco style where we filled ours up with a fajita mixture of mushrooms, onions, and peppers, we opted for no beans and everyone could fill their tortilla up with shredded cheese, shredded lamb, (I used my food processor and pulsed until I got the texture I liked)  and of course my non-fat greek yogurt which we use as sour cream in our household.

To keep it healthy for me I only had one tortilla I did have seconds on the fillings though and let me tell you it was quite delicious and at no point did I wonder where the mint jelly was.  These were absolutely delicious!

I have to be honest though I didn’t initially think I was cooking up lamb as we had a piece of meat in the freezer that was not labeled and I wanted to use it up and I decided whether it was pork or beef it would be great in our burritos.  This was a reminder to me to label and date all food that goes in the freezer as I cannot remember anymore what all gets placed in there.

Well it ended up being another holiday surprise because it was lamb and they were truly wonderful and because the meat had some freezer burn I was concerned about the flavor but I need not be concerned as we slow cooked it in the crock pot all day and it turned out amazing!  This even with it being lamb meat was truly much more frugal than going out to eat….and I consider it a “Make Your Own Take Out” meal!  So give it a try!
