Gluten Free Cauliflower A.K.A. Paleo Pizza

The first thing that I started dreaming of when I started my Gluten- Free/Sugar Free journey which is mainly Paleo (I’m not a purist) but I do eat some grains at times was “Pizza”. Not a big surprise considering I was raised in a culture where my Mom served the most delicious home-made biscuits just about every Sunday! We went to a place called Shakey’s pizza when I was young and I couldn’t wait to go to eat that delicious pizza. As I have aged of course I have developed a taste for some gourmet pizza and even tried my hand at making my own for a while and we got some amazing results.

However now I am on the path of eating gluten-free I’m on Day 23 for me this is HUGE I have always in the past dabbled with Paleo but not really commit to it.  This is the first time I feel like my health is at stake and I want to inspire others through my journey.  I am feeling better everyday and I thought I would share my latest culinary attempt at Paleo Pizza results with all of  you and oh boy were they yummy!

Who Says You Need Wheat For Pizza????

The hardest part about giving you all instructions for gluten-free pizza is knowing how much cauliflower rice you can make with the cauliflower florets and I really don’t know just yet so you will have to experiment to figure it out as every cauliflower head has different sized florets.

First off before you do anything you need to make a batch of cauliflower rice.  So much better for you too!

 

Just tear off a bunch of cauliflower florets (no stems), wash them and pulse in the food processor until it looks like this!

That is all you have to do to make cauliflower rice it’s very simple.

 

Then we spread this out on a pan and press out the water and soak it up with a clean dish towel or paper towels.

Gluten Free Cauliflower Pizza
3 Cups. cauliflower rice
1 TBSP. almond flour or coconut flour
1 egg
1/4 cup. italian cheese, mozzarella, or pizza cheese
Season with italian seasonings to taste (basil, oregano, etc…)
1/4 cup parmesan cheese (we used freshly grated parmesan cheese)
You can sprinkle in to the dough other seasonings you may like too such as garlic or salt and pepper (I did not and it was still delicious)

The process
Heat up the cauliflower rice in the microwave about 3 1/2 to 4 minutes
Set aside and let cool
Then stir in all the other ingredients
You may want to take your rings or any jewelry off and then you place on a greased pan and form it into a thin circle
I greased my pan with ghee

Cook in an oven at 450 degrees between 11 and 15 minutes just depends on your oven you want it to be golden brown.

Lastly place your toppings on top I used a low sugar tomato sauce, mozzarella cheese, parmesan cheese, and some chicken. My husband mentioned this would make a great taco pizza too you would just replace the tomato sauce with salsa and place hamburger and peppers on top.

This was delicious eating!  It’s nice to indulge and know you are taking care of your body too!  Eat the right things, move some, remember to dance and laugh….Oh and lots of work!  Hope this recipe inspires you!
