Meal In Minutes: Shrimp & Spinach Pasta

It’s Sunday and I can’t wait to share my Shrimp & Spinach Pasta recipe! I love meals that come together in minutes quickly and easily! A great day to talk food and cooking and it’s a day actually where I sometimes do the most cooking I do all week it just depends!

I am also excited to share another new series I am starting “Meal In Minutes” since I am on the go working, podcasting, helping my son with college applications I thought this is the perfect time to start this series as well!

Well today I thought I would share a fave in our household and it’s my Shrimp & Spinach Pasta recipe!  My husband and the kids have asked for this on a regular basis around our household and it’s so easy so a great way to have a festive meal and make a big hit with little stress. Although it helps to be adept and quick and peeling shrimp :).  I buy the shrimp when it’s on sale so it’s an affordable decadent meal as well!

Ingredients:
2 lbs. Shrimp (peeled and deveined)
1 medium onion chopped
1 green pepper chopped
1 Jar of Pasta Sauce 16 oz.
1 jar of canned tomatoes 16 oz.
1 TBSP. Italian Seasoning
1 tsp. garlic powder (if you add fresh garlic cook it down with onions)
Red Pepper Flakes to taste
salt and pepper
3 to 4 Cups of Fresh Spinach
1 Box (12 oz) of Penne Pasta ( I use gluten-free)
1/2 stick butter or ghee
1 Cup Italian shredded cheese or mozzarella
Optional: Top with mozzarella and or parmesan

Instructions:

Heat up large cast iron skillet over medium low heat
place all but a tbsp. of half stick of butter in the skillet to start melting
Peel and devein shrimp
chop 1 onion and 1 pepper
melt one half stick butter
stir shrimp, pepper, and onions up in butter while cooking (you can put the peppers and onions in first you do not want to overcook the shrimp)
Cook up noodles in hot water (make sure to add 1tsp. of salt and 1 tbsp. olive oil into the pot of water)
place pasta in pot to boil
Once pasta is done to your liking or according to packaging instructions drain and set aside (gluten-free pasta does not need to cook as long but taste it to test)
Now in another skillet place the tbsp. of butter you reserved and place the spinach with a lid on it to cook down
Now it’s time to add the sauce and tomatoes on top of the shrimp, peppers, and onions.
Add italian seasoning
Add garlic powder
Add red pepper flakes to taste
Add salt and pepper to taste
While that is all cooking together add drained spinach into the sauce
Place noodles in a serving dish
Sprinkle cup of cheese on top
Pour shrimp and spinach sauce on top
Top with mozarella and or parmesan if you like!
