I absolutely love basil and peaches don’t you? I have some basil I need to put up tomorrow and I have to stop procrastinating about the peaches in my crisper bin……I will most likely make peach salsa as the last batch I made turned out so great! My Mom gave me this recipe for pesto and she freezes it and she says it is fabulous. Here is the recipe for the pesto I hope you love it as much as we do!  

And you all know I love to keep things simple.

Ingredients:
2 cups fresh basil leaves (you can substitute with garlic scapes too)
1/2 cup parmesan cheese
1/2 cup olive oil
1/3 cup pine nuts (you can subsitute with other nuts too!)
2-4 garlic cloves minced (to your taste!)
Salt and pepper to taste

Instructions

Place all ingredients in your food processor and pulse until creamy and chunky.  So delicious!  So easy!

 

The cool thing about pesto is it makes just about any dish taste better; I mean you can add it to a sandwich, pasta, or salad!  It just livens things up!

I also found a great deal on some peaches so I am going to have to do something with them as well.  Hoping to make a peach salsa and once I do I will post the recipe here on the blog for all of you!
