Eggs In A Nest, One Eyed Jacks, Egg In A Hole, or Egg In a Basket whatever you call them they are delicious!

I call them Eggs In A Nest and my friend and her family call them One Eyed Jacks and in other parts of the country they are called by other names but it really doesn’t matter what you call them they are delicious and fun for the entire family!

eggs in a nestMy friend told me when she makes them she even grills the little piece of toast in the center so I did the same and my son gave them rave reviews!  Not only do Eggs In A Nest look fun they are fun to eat and young children especially are enamored with them!  To make this you simply use a biscuit cutter to cut out the whole in the toast and then crack an egg open inside the toast and fry it!

The one below already cooked is mine I love my eggs cooked over hard but this one the yolk was just about perfect in the middle just enough yolk for the toast to soak up!  YUM!

I love recipes that the whole family can make together especially you have little ones that like to cook with you this is one of those perfect recipes to have them cut out the toast for you 🙂  I also love eggs I have said on more than one occasion that if I were to have a last supper that “eggs” would be the main attraction accompanied by bacon, grits, and toast.

By the way just as a side note did you know how healthy eggs are for you?  I am a follower of the Weston Price literature and have learned that eggs are extremely healthy for you and definitely a whole food you want to have in your diet.  Here is a quote straight from “The Weston Price” website:
